I have an exciting twist on a beloved Indian snack: Pakoras. But hold on tight because we’re about to take this crispy delight to a whole new level of healthy deliciousness.

Imagine you have a craving for Pakoras, but you want to avoid deep frying. What if I told you there’s a healthier, easier, and equally delicious alternative? Enter Waffle Maker Pakoras!

1 Medium Onion Finely Sliced

 200 g Grated Potato

 2 Handfuls of Spinach Leaves Roughly Chopped

 1 Handful Chopped Coriander

 100 g Grated Cauliflower

 1 tsp Salt

 2 tsp Crushed Coriander Seeds

 1 tsp Garam Masala

 1.50 tsp Fresh Green Chilli

 1 tsp Caraway Seeds

 2 tsp Kasoori Methi

 150 g Chickpea Flour

 Splash of Water if needed

  1. Finely dice you onions, grate your potatoes, chop your spinach, chop your coriander and place into a large bowl.
  2. Add the following into the mixture: 1 Tsp salt, 2 Tsp crushed coriander seeds, 1 Tsp Garam Masala, 1.5 Tsp fresh green chilli, 1 Tsp Caraway seeds, 2 Tsp Kasoori Methi

    Mix and place to one side for 10 minutes.
  3. After 10 minutes add the chickpea flour to the mixture and mix well.
    Add a splash of water if needed.
    Add 1 tsp Baking powder to the mix along with 1 Tbsp Olive Oil. This will give you lovely, fluffy waffles.
    Add more water if needed but you don’t want the mixture to be too runny.
  4. Add to your waffle maker and cook for 6-8 minutes, and hey presto, you have a waffle pakora.

  5. Serve with a mint dip, I love mine with ketchup…..I know, I’m just weird
