This is my take on a healthy Panjabi Paratha (flatbread/chapatti) using leftover daal.
Packed with protein, nutrients, fiber and slow releasing carbs. These daal parathas will keep you fuller for longer leaving you totally satisfied.
This is something my mum used to make just to use up some of the daal leftover in the fridge.
Fast forward several years later and my wife and I likes to make extra daal just so we can make these delicious Parathas. They’re easy to prepare and made in no time.
In the Singh4Supper house these are eaten up in no time.
The daal is already perfectly spiced but becomes bland when the flour is added. Therefore I add extra onions and spices into the flour to jazz it up. Trust me, it works.
Serve it with natural yogurt, pickle or have it on its own with a lovely cuppa.
Method
Place your leftover daal into a brown along with the following and mix: onions, garlic, ginger, salt, Kashmiri chilli powder, garam masala, fenugreek leaves.
Sift your flour into the mixture and knead for 10 minutes until you have a smooth dough without any cracks.
Depending on the consistency of your daal, you may need a little water. I didn’t need any.
Pat the dough with a little olive oil, cover with cling film and place in the fridge for 30 minutes and allow to rest.
To make your paratha take your dough and make a little dough ball (slightly smaller than a tennis ball).
Working with one dough ball at a time, roll it in dry chapati flour, and place it on the rolling board. Gently flatten it with your fingertips.
Using a rolling pin, roll the ball into a 6”-7”circle slighter thicker than chapati and use dry chapati flour as required to roll the paratha.
Heat a frying pan or tawa to a medium heat. Once it's hot, lift your rolled out paratha and transfer it to the pan/tawa.
Cook the paratha on one side and flip after 60 seconds.
Apply some butter or olive oil to the top of the paratha whilst the second side is cooking.
Again flip & let the side with butter roast. Repeat the same step with the other side too.
Once both sides are well cooked, remove from the pan/tawa onto a plate and apply more butter on top.
Repeat the above steps to make as many parathas you want to eat. How many can you handle???
