So, after getting a mouthful from my wife the other day about my weight, I woke up with good intentions to have porridge but I ended up making Crumpets in a nice spicy tomato buttery sauce.

Ingredients:

2 Crumpets toasted and then cut into squares

 ½ Onion thinly sliced

 ½ Pepper thinly sliced

 3 Mushrooms sliced

 2 Tomatoes fresh and blitzed

 1 Coriander (Handful)

 ¼ tsp Salt

 ½ tsp Garam masala

 ½ tsp Cumin seeds

 ½ tsp Chilli flakes

 125 ml Water

 Butter (more)
